Almond Crusted Catfish Recipe
Ingredients
1/2 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
2 talbespoons oil
3 talbespoons butter
1/4 cup slivered almonds
1 teaspoon grated lemon zest
2 teaspoons lemon juice
1_ Combine flour with salt and pepper.
2_ Flour fillets.
3_ Heat oil in large, heavy (iron) skillet over medium heat.
4_ When the oil is hot, add fillets in and cook 3 to 4 minutes per side or until the fish is flaked with fork.
5_ Put fish fillets on a serving platter and keep warm.
6_ Wipe your skillet clean with paper towel, return to medium heat, Add 3 tablespoons of butter and melt, add Almonds and cook until they are light brown. Add the zest and lemon juice and stir for 15 seconds.
7_ Pour the sauce over the cooked fillets and garnish.
Garnish - Parsley sprigs and lemon wedges or slices.
Enjoy with a fresh garden salad and wild rice.
