Lemon Pepper Dill Cod Recipe

Fresh baked Cod with Lemon Pepper cucumber dill sauce.

For this cod recipe it is best to make your cucumber dill sauce the day before you cook your fish, it tastes better that way. If your fish can't wait, make it at least a couple of hours prior to cooking fish.

Lemon Pepper cucumber dill sauce:

2 cups sour cream

1 tablespoon red onion, chopped

4 tablespoons chopped cucumber, peeled

juice of half lemon

1/4 tsp Lemon Pepper

1/4 cup Ranch Dressing

2 tsp dill weed

1 tsp Lawry's seasoned salt

In a large mixing bowl, combine sour cream, lemon juice, red onion, chopped cucumber, lemon pepper, dill, and Ranch dressing. Mix well and refrigerate as mentioned above.

Cut cod fillets into serving size portions. Remove any bones if necessary. Sprinkle with seasoned salt and lemon pepper.

Place fish fillets into baking dish. Pour in about 1/4 cup of your favorite white wine or white cooking wine. Bake for 10 to 15 minutes until flaky and white throughout.

Dollop chilled cucumber sauce mixture onto cooked cod, serve up with rice pilaf and fresh vegetables or a fresh garden salad.
