Baked Flounder And Vegetables
Ingredients for this baked flounder recipe:
1 lb. flounder fillets
1 bell pepper cored and chopped
1 lb. canned tomatoes, drained and sliced
2 summer squash, sliced
1/2 Cup chopped onions
1/8 tsp. garlic powder
1/8 tsp. white or black pepper
1 tsp. salt
Preheat oven to temperature 450°F. Coat the center of 4 sheets
of foil with non-stick spray and place one fillet in the
center of each sheet. Make sure your foil is big enough to
seal the fish and vegetables. Combine remaining ingredients in
a bowl. Spoon this mixture on top of each portion of fish.
Fold each foil packet over the fish and vegetables. Make a
double fold to seal tightly. Place the packets on a baking
sheet. Bake approx. 20 minutes, or until fish flakes easily
with a fork. Serves: 4
